So here is the Caramel recipe I used for my caramel apples. It is so delicious, just remember to use a candy thermometer and follow the recipe exactly for #1, but then see Caramel Apple Directions Below. This caramel is great because the toppings don't slide off after you coat them on, whereas the caramels you unwrap usually slides off the apple. Have fun!

INGREDIENTS:
| 1 cup butter or margarine 1 pound light brown sugar 1 (14 ounce) can sweetened condensed milk | 1 cup light corn syrup 1 pinch salt 1 1/2 teaspoons vanilla extract |
DIRECTIONS:
| 1. | In a heavy bottomed saucepan over medium heat, combine the butter, brown sugar, sweetened condensed milk, corn syrup and salt. Bring to a boil, stirring constantly. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Cook for 2 minutes at that temperature. Remove from the heat and stir in vanilla. |
| 2. | Meanwhile, butter a 9x13 inch baking pan. When the caramel is ready, pour into the buttered pan. Allow to cool completely at room temperature. Remove from the pan and cut into squares using scissors. Wrap individual pieces in waxed paper or cellophane. |
DIRECTIONS for Caramel Apples
- Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
- Make caramel using "Chewy Caramel" recipe. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan.
- Roll the apples in the candy mixture of your choice to coat. Place on the aluminum foil and chill.
To drizzle chocolate: Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. For ease, put the melted chocolate into a plastic baggie and snip the very tip of one side off. Gently drizzle over the apples and return them to the refrigerator until ready to serve.
